* Exported from MasterCook * Pumpkin Fruit Bread Recipe By : Nancy Garvin Serving Size : 1 Preparation Time :0:00 Categories : Breads Freezer Meals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 15 oz Can pumpkin (2 c) 2 c Sugar 2/3 c Butter -- softened 1/2 c Water 3 Eggs 2 1/2 c All purpose flour 2 ts Soda 1 ts Salt 1 ts Cinnamon 1/2 ts Cloves 2/3 c Dates or raisins -- chopped 1 c Walnuts -- chopped Preheat oven to 325°F. Combine pumpkin, sugar, butter, water, and eggs. Beat 1 minute at medium speed with an electric mixer. Add flour, soda, salt, cinnamon, and cloves. Beat 1 minute at medium speed. Stir in dates or raisins and nuts. Pour into a greased 8x4" or 9x5" loaf pan. Bake for 50 to 60 minutes until done. Cool in pan 5 minutes. Remove from pan and cool completely. Note: This is an absolutely wonderful recipe. It tastes just as terrific after being frozen as it does fresh baked, if not better! :o) I give this to my boss at Christmas time and it has him eating out of my hands for a few days anyway!
