* Exported from MasterCook * Banana Nut Bread Recipe By : Zel Ford Serving Size : 1 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 c All purpose flour -- sifted 2 ts Baking powder 1/4 ts Baking soda 1/2 ts Salt 1/3 c Shortening -- softened 1 c Ripe bananas -- mashed 2/3 c Granulated sugar 2 Eggs -- unbeaten 1/2 c Nuts -- coarsely chopped Heat oven 358°F. Grease 9x5x3" loaf pan. Sift flour, baking powder, baking soda with electric mixer at medium speed thoroughly mix shortening with sugar. Then, with eggs, until very light and fluffy about 4 minutes. Altogether, then at low speed or blend, beat in flour mixture to which chopped nuts have been added alternating with bananas until mixture is just smooth then turn into pan. Bake 1 hour or until done. Cool in pan 10 minutes. Cool overnight before slicing.
