* Exported from MasterCook * Spiced Pumpkin Bread With Orange Cream Cheese Recipe By : Lisa-Fabfood Serving Size : 12 Preparation Time :0:00 Categories : Breads Christmas Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 c Butter -- softened 1 1/4 c Sugar 1 c Pumpkin -- solid pack 1 Egg 1 3/4 c All-purpose flour 1 ts Ground cinnamon 1/2 ts Baking soda 1/2 ts Salt 1/4 ts Baking powder 1/4 ts Ground ginger 1/8 ts Ground allspice 1/2 c Dried currants 1/2 c Pecans -- chopped Orange Cream Cheese: 8 oz Cream cheese -- softened 3 tb Sugar 2 ts Pure vanilla extract 1 ts Orange zest -- freshly grated 1 ts Milk -- up to 2 ts Using electric mixer, beat butter and sugar until light; add pumpkin and egg, mixing well. In medium bowl, combine flour, cinnamon, baking soda, salt, baking powder, ginger, and allspice; gradually add to butter mixture, mixing until well blended. Stir in currants and pecans. Pour batter into greased 8x4" loaf pan. Bake at 350°F for 1 to 1-1/4 hours or until wooden pick inserted into center comes out clean. Cool in pan on wire rack 15 minutes. Remove from pan; cool completely on wire rack. Serve with Orange Cream Cheese. Orange Cream Cheese: In medium bowl, combine softened cream cheese, sugar, vanilla extract, and orange zest; stir until smooth. Stir in milk to make spreading consistency.
