                    Louise's Chocolate Zucchini Bread

   3      lg            Eggs
   2      c             Sugar
   1      c             Oil
   2      oz            Baking chocolate
   1      ts            Vanilla
   2      c             Zucchini -- grated
   1      ts            Cinnamon -- or more
     1/4  ts            Baking powder
   1      ts            Baking soda
   1      c             Nuts -- chopped, or more
   3      c             Flour
   1      ts            Salt

Beat eggs until yellow. Beat in sugar & oil. Melt chocolate. Stir
into egg mixture. Sift flour with salt, cinnamon, baking powder & soda.

Stir into well oiled pans: angel food or two 9x5" loaf pans. Bake
350°F for 1 hour 30 minutes. (Start with less time.) Cool in pans for
5 to 20 minutes. Turn out on rack and cool.
