* Exported from MasterCook Mac * Banana Cake Recipe By : Delicious Decisions/tpogue@idsonline.com Serving Size : 12 Preparation Time :0:00 Categories : Desserts Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 c Unsalted butter -- softened 1 1/2 c Sugar 2 Eggs 1 c Banana -- mashed 2 c Cake flour -- sifted 1 ts Baking powder 1 ts Baking soda 1/2 ts Salt 1/2 c Buttermilk 1/2 c Pecans -- chopped 1 c Coconut -- flaked Filling: 1/2 c Sugar 2 tb Flour 1/2 c Whipping cream 2 tb Unsalted butter 1/4 ts Salt 1/2 c Pecans -- chopped Frosting: 1/2 c Unsalted butter -- softened 1 lb Powdered sugar 1/4 c Milk 1 1/2 ts Vanilla Preheat oven to 375°F. Butter and flour two 9" cake pans. Cream butter and sugar until fluffy. Add eggs, and beat 2 minutes. Add banana, beat 2 minutes. Sift together dry ingredients and add to batter alternately with buttermilk. Stir in nuts. Pour into cake pans and gently press coconut onto batter. Bake 30 minutes or until done. Remove from oven and cool in pans 10 minutes. Turn onto racks to cool thoroughly. To prepare filling, combine sugar, flour, cream, and butter in a saucepan over medium heat. Stir until mixture thickens. Do not boil. Stir in salt, pecans, and vanilla. Remove from heat to cool. Put one cake layer on a serving plate. Spread top with half the filling mixture. Place other layer on top and spread remaining filling on top. To prepare frosting, cream butter until light and add half the sugar, beating constantly. Add milk and remaining sugar alternately until mixture achieves spreading consistency. Blend in vanilla.
