* Exported from MasterCook * Butterscotch Cake Recipe By : Jo Anne Merrill Serving Size : 10 Preparation Time :0:35 Categories : Cakes Prize Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c Cake flour -- sifted 3 ts Baking powder 1/2 ts Salt 2 md Eggs 1 1/2 c Brown sugar -- packed 1/2 c Butter -- softened 1 ts Vanilla extract 1 c Milk Butter Frosting: 1/4 c Butter 2 c Powdered sugar 1/2 ts Vanilla extract 2 tb Cream 1 tb Water -- hot Sift together flour, baking powder, and salt. Add brown sugar, butter, vanilla, and 2/3 cup milk. Beat for 2 minutes at medium speed and then add rest of milk and the eggs. Beat 2 minutes more. Pour into two 8" greased and floured cake pans. Bake in preheated 350°F oven for 25 to 30 minutes. Frost with butter frosting. Frosting: Brown butter over low heat, watching carefully. Add rest of ingredients and stir until cool and of consistency to spread.
