MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Carrot Cake Categories: Cakes, Desserts, Fruits, Vegetables, Nuts Yield: 12 Servings 2 c A-P flour 2 c Sugar 2 ts Ground cinnamon 1 ts Baking soda 1/2 ts Salt 3 lg Eggs; room temperature 1 1/2 c Oil 2 c Carrots; fine grated 1 ts Vanilla extract 1 c Crushed pineapple; - well drained 1 c Sweetened shredded coconut 1 c Nuts; chopped MMMMM-------------------CREAM CHEESE FROSTING------------------------ 6 oz Cream cheese; softened 6 tb Butter; softened 3 c Confectioners' sugar 1 ts Vanilla extract Additional nuts; chopped In a large bowl, combine the flour, sugar, cinnamon, baking soda, and salt. Add the eggs, oil, carrots, and vanilla; beat until combined. Stir in pineapple, coconut, and nuts. Pour into a greased 13x9" baking pan. Bake @ 350°F/175°C for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. For frosting, in a small bowl, beat cream cheese and butter until light and fluffy, 5 to 7 minutes. Add the confectioners' sugar and vanilla; beat until smooth. Frost cake.
