* Exported from MasterCook * Diabetic German Chocolate Cake Recipe By : typed by Shane Ludwig Serving Size : 60 Preparation Time :0:00 Categories : Diabetic Cake Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 oz Baking chocolate 1/2 c Water -- boiling 1/2 c Butter 1/2 c Granulated sugar replacement 3 tb Granulated fructose 4 Egg yolks 2 ts Vanilla extract 2 1/4 c Flour 1 ts Baking soda 1/2 ts Salt 1 c Buttermilk 4 Egg whites -- stiffly beaten Frosting: 1 c Evaporated skim milk 1/3 c Granulated sugar replacement 1 Egg 1 tb Flour 2 tb Butter 2 ts Vanilla extract 3/4 c Unsweetened coconut 1/3 c Pecans -- chopped Cake: Melt chocolate in boiling water, cool. Cream next three ingredients until fluffy. Add yolks, one at a time, beating well. Blend in vanilla and chocolate water. Sift flour with baking soda and salt. Add alternately with buttermilk to chocolate mixture, beating each time until smooth. Fold in beaten egg whites. Grease three 9" pans and line with paper. Grease again and pour in batter. Bake 25 to 30 minutes at 350°F. Remove paper lining and cool. Frosting: Combine all but vanilla and pecans in saucepan. Cook and stir on low heat until thick.
