MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mom's Citrus Buttermilk Cake Categories: Cakes, Desserts, Dairy, Citrus Yield: 12 servings 1 c Shortening 2 c Sugar 4 lg Eggs; room temp 2 ts Lemon extract 3 c A-P flour 1 ts Baking powder 1/2 ts Baking soda 1/2 ts Salt 1 c Buttermilk MMMMM---------------------------GLAZE-------------------------------- 1 1/2 c Confectioners' sugar 1 tb Grated orange zest 5 tb Orange juice 1 tb Grated lemon zest 5 tb Lemon juice 1/4 ts Salt Set oven @ 350°F/175°C. Grease and flour a 10" fluted tube (bundt) pan. Cream shortening and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in extract. In another bowl, whisk together flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating after each addition. Transfer to prepared pan. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Poke holes in warm cake using a fork or wooden skewer. Mix glaze ingredients; spoon slowly over cake. Cool 15 minutes before removing from pan to a wire rack; cool completely. If desired, sprinkle with additional zest before serving.
