* Exported from MasterCook * Hummingbird Cake Recipe By : Quick n Easy, Jun, 1997 Serving Size : 1 Preparation Time :0:00 Categories : Cakes Dessert Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 c Flour 2 c Sugar 1 ts Salt 1 ts Baking soda 1 1/4 ts Cinnamon 3 Eggs -- beaten 1 1/2 c Vegetable oil 2 ts Vanilla 8 oz Can crushed pineapple -- undrained 2 c Banana -- chopped 1 1/2 c Pecans -- chopped Frosting: 16 oz Cream cheese -- softened 1 c Butter -- softened 2 lb Powdered sugar 2 ts Vanilla 1 c Pecans -- chopped To make cake, sift together flour, sugar, salt, soda, and cinnamon. Add eggs and oil and stir. Stir in vanilla, pineapple, banana, and pecans. Spoon batter into three well-greased and floured 9" cake pans. Bake at 350°F for 25 to 30 minutes. Cool in pans on a rack for 10 minutes. Turn cake out of pans. To make frosting, cream together cream cheese and butter until smooth. Slowly add powdered sugar, mixing well. Stir in the vanilla. Frost the cake between layers then the top and sides. If desired, dredge the sides with chopped pecans and sprinkle pecans on top of cake. - - - - - - - - - - - - - - - - - -
