Grandma's Best Cake 2 c All-purpose flour; sifted 2 ts Soda 2 ts Cinnamon 1/2 ts Salt 3 Eggs; beaten 3/4 c Oil 3/4 c Buttermilk 2 c Sugar 2 ts Vanilla 1 c Crushed pineapple; well drained 2 c Carrots; grated 3 1/2 oz Coconut 1 c Walnuts; chopped Sift together dry ingredients (flour, soda, cinnamon & salt). Cream well beaten eggs, oil, buttermilk, and sugar. Mix in vanilla and add to dry ingredients. Fold in pineapple, carrots, coconut, and nuts. Pour ingrediends into a well greased and floured 13 x 9 x 2-1/2" pan and bake at 350°F for 55 minutes. About 10 minutes before cake is removed from oven make the Buttermilk Frosting.
