MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Easy Apple Cake

      Yield: 20 Servings

  1 3/4 c  Sugar
      1 c  Canola oil
      3 lg Eggs
      1 ts Vanilla extract
      2 c  A-P flour
  1 1/4 ts Baking powder
      1 ts Salt
      1 ts Ground cinnamon
    1/4 ts Baking soda
      2 c  Tart apples; peeled,
           - fine chopped
      1 c  Walnuts; chopped
  1 1/4 c  Whipped topping

  Set oven @ 350°F/175°C.

  In a large bowl, beat the sugar, oil, eggs, and vanilla until well
  blended. Combine the flour, baking powder, salt, cinnamon, and
  baking soda; gradually beat into sugar mixture until blended. Fold
  in apples and walnuts.

  Transfer to a greased 13x9" baking dish. Bake until a toothpick
  inserted in the center comes out clean, 35 to 45 minutes. Cool on a
  wire rack. Serve with whipped topping.
