MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Potluck German Apple Cake Categories: Cakes, Desserts, Fruits, Cheese, Nuts Yield: 16 Servings 3 lg Eggs; room temperature 2 c Sugar 1 c Vegetable oil 1 ts Vanilla extract 2 c A-P flour 2 ts Ground cinnamon 1 ts Baking soda 1/2 ts Salt 4 c Tart apples; - peeled, chopped 3/4 c Pecans; chopped MMMMM--------------------------FROSTING------------------------------- 8 oz Cream cheese; softened 2 ts Butter; softened 2 c Confectioners' sugar In a large bowl, beat the eggs, sugar, oil, and vanilla. Combine the flour, cinnamon, baking soda, and salt; add to egg mixture and mix well. Fold in apples and nuts. Pour into a greased 13x9" baking dish. Bake @ 350°F/175°C until a toothpick inserted in the center comes out clean, 55 to 60 minutes. Cool on a wire rack. In a small bowl, beat cream cheese and butter.
