MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Blueberry Pudding Cake Categories: Cakes, Fruits, Desserts Yield: 8 Servings 2 c Blueberries 1 ts Ground cinnamon 1 ts Lemon juice 1 c A-P flour 3/4 c Sugar 1 ts Baking powder 1/2 c Milk 3 tb Butter; melted MMMMM--------------------------TOPPING------------------------------- 3/4 c Sugar 1 tb Corn starch 1 c Water; boiling Whipped cream (optional) Set oven @ 350°F/175°C. Toss blueberries with cinnamon and lemon juice; pour into a greased 8" square baking dish. In a small bowl, combine flour, sugar, and baking powder; stir in milk and butter. Spoon over berries. Combine sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. Bake until a toothpick inserted into the cake portion comes out clean, 45 to 50 minutes. Serve warm.
