MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Constitution Day Cake Categories: Cakes, Desserts, Fruits, Nuts, Citrus Yield: 13 servings MMMMM---------------------------CAKE--------------------------------- 49 oz (1.4 kg) self raising flour 21 oz (600 g) soft unsalted butter 3 1/2 oz (100 g) caster sugar 12 lg Eggs 1 qt (1 L) milk 1 ts Sea salt 3 1/2 oz (100 g) almonds; rough - chopped 3 1/2 oz (100 g) walnuts; rough - chopped 7 oz (200 g) mixture of dried fruits - using sultanas, currants, - and raisins 2 Lemons; grated rind (zest) 2 Oranges; grated rind (zest) 3 1/2 oz (100 g) dried pineapple, - pawpaw or mango; rough - chopped 3 1/2 oz (100 g) apricots, peaches or - apple 200 mL Dark rum 200 mL Olive oil MMMMM-----------------------LEMON ICING------------------------------ 10 1/2 oz (300 g) icing sugar 1 oz (30 g) soft butter 1 Lemon grated rind & juice Sift flour, rub in butter, add sugar, salt, nuts, dried fruits and orange and lemon rind Beat eggs with milk, rum and olive oil Add wet ingredients to dry, mixing to a batter consistency Bake in a large cake tin - well oiled and floured and line the bottom of the tin with baking paper Bake @ 360°F/182°C for one hour. Test by inserting a satay stick to be withdrawn cleanly. Cool slightly in the tin then turn out onto a cooling rack When cold ice with lemon icing. MAKE THE ICING: Sift icing sugar, mix ingredients to a smooth paste Spread on top of the cooled cake, allow at least 30 minutes for the icing to set.
