MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Best Lemon Cake Ever Categories: Cakes, Desserts, Citrus, Nuts Yield: 9 Servings 175 g Butter 175 g Caster sugar 4 lg Unwaxed lemons 3 lg Eggs 100 g Self raising flour 75 g Ground almonds 2 tb Milk 75 g Demerara sugar Set oven @ 160°C/320°F (fan). Line a 2 lb loaf tin. Beat butter, caster sugar and zest of two of the lemons. Beat in the eggs one at a time. Fold in the flour and then the almonds. Add enough milk for the mix to be dropping consistency--so that it falls off the spoon. Pour into the tin and bake for about 50 minutes--the top goes light golden brown. Mix the zest of the other 2 lemons and the juice of 2 lemons with the demerara sugar. Poke holes all over the cake and pour the zest & juice & sugar syrup over it until the cake absorbs it all.
