MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Pear Olive Oil Cake Categories: Cakes, Fruits, Desserts Yield: 12 Servings 1 1/4 c Brown sugar; - +2 ts, packed, divided 1/2 c Olive oil 3 lg Eggs; room temperature 2 tb Milk 2 ts Vanilla extract 1 c A-P flour 3/4 c Almond flour 2 ts Baking powder 1 ds Salt 3 md Red pears; - peeled, thin sliced 1/4 ts Ground cinnamon Sweetened whipped cream - (optional) Set oven @ 325°F/165°C. Grease a 10" springform pan. Place pan on a baking sheet. In a large bowl, beat 1-1/4 cups brown sugar, oil, eggs, milk, and vanilla until well blended. In another bowl, whisk flours, baking powder, and salt; gradually beat into sugar mixture. Transfer to prepared pan. Arrange pears over top; sprinkle with remaining 2 ts brown sugar and cinnamon. Bake until a toothpick inserted in center comes out clean, 55 to 60 minutes. Cool completely in pan on a wire rack. If desired, serve with whipped cream.
