* Exported from MasterCook II * Mom's Zucchini Cake Recipe By : Rosemary Dudlack, Calumet City, IL Serving Size : 16 Preparation Time :0:00 Categories : Cakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Box yellow cake mix 4 Eggs 1/2 c Vegetable oil 1 ts Cinnamon 1 tb Vanilla 2 c Zucchini -- unpeeled, grated 1/2 c Raisins 1/2 c Walnuts While growing up in Hegewisch,my mother Ann would bake her fast and easy Zucchini Cake each summer. Beat cake mix, eggs, oil, cinnamon, and vanilla together for 6 to 7 minutes. Fold in grated zucchini, raisins, and nuts. Bake in a greased and floured 10" tube pan at 350°F for 40 to 50 minutes. May use toothpick test. Cake may be glazed or sprinkled with powdered sugar, but Rosemay say's her mother's whipped frosting (see recipe) is out of this world.
