* Exported from MasterCook * Meringue Topped Cheesecake Recipe By : Key Gourmet CD Rom Serving Size : 8 Preparation Time :0:00 Categories : Cheesecakes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c Plain vanilla cookies -- crushed 2 1/2 tb Sugar 1 1/2 ts Cinnamon 1/2 c Butter -- melted Filling: 1/2 lb Cream cheese 1 Can sweetened condensed milk 3 Egg yolks 1 1/4 tb Lemon zest -- grated 4 tb Lemon juice Meringue Topping: 3 Egg whites 2/3 c Sugar Mix together the crushed cookies, sugar, cinnamon, and melted butter. Firmly press on the bottom and sides of a 9" springform pan. Chill until ready to use. Soften the cream cheese and beat in the condensed milk, lightly beaten egg yolks, lemon zest, and lemon juice. Pour into the prepared crust. Beat the egg whites until they form soft peaks. Slowly add half the sugar and beat until stiff. Fold in the remaining sugar and spread over the cheese filling.
