* Exported from MasterCook Mac * Junior Mint Cheesecake Recipe By : Leanda Goss Serving Size : 8 Preparation Time :0:00 Categories : Cheesecakes Chocolate Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 oz Junior Mints (2 pkg) 24 oz Cream cheese (3 pkg) -- softened 2/3 c Sugar 3 Eggs 1 ts Vanilla Graham Cracker Crust: 2 c Graham cracker crumbs 1/4 c Sugar 6 tb Butter -- melted Crust: Combine ingredients. Press in bottom and sides of 9" springform pan. Place junior mints in freezer. Preheat oven to 350°F. With electric mixer or in a food processer; combine cream cheese and sugar until smooth. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Pour into crust. Chop cold junior mints and sprinkle onto cheesecake. Bake 40 to 45 minutes or until just set.
