MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Banana Bars With Cream Cheese Frosting Categories: Fruits, Desserts, Dairy Yield: 48 Servings 1/2 c Butter; softened 1 1/2 c Sugar 2 lg Eggs; room temperature 1 c Sour cream 1 ts Vanilla extract 2 c A-P flour 1 ts Baking soda 1/4 ts Salt 2 md Ripe bananas (1 c); mashed MMMMM--------------------------FROSTING------------------------------- 8 oz Cream cheese; softened 1/2 c Butter; softened 2 ts Vanilla extract 4 c Confectioners' sugar Set oven @ 350°F/175°C. In a large bowl, cream butter and sugar until light and fluffy, 5 to 7 minutes. Add eggs, sour cream, and vanilla. Combine flour, baking soda, and salt; gradually add to creamed mixture. Stir in bananas. Spread into a greased 15x10x1" baking pan. Bake until a toothpick inserted in the center comes out clean (do not overbake), 20 to 25 minutes. Let cool. For frosting, in a large bowl, beat cream cheese, butter, and vanilla until fluffy. Gradually beat in enough confectioners' sugar to achieve desired consistency. Frost bars.
