MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Ginger Cashew Bars Categories: Bars, Cookies Yield: 1 Batch MMMMM----------------------------BASE--------------------------------- 75 g Unsalted butter; softened, - plus more for the tin 75 g Caster sugar 1 md Egg 100 g Toasted cashews; chopped 1 ts Vanilla extract 125 g Plain flour 1/2 ts Baking powder MMMMM------------------------GINGER LAYER----------------------------- 175 g Unsalted butter; softened 200 g Dark muscovado sugar 2 ts Tamarind extract 2 md Eggs 200 g Glace ginger; chopped 2 ts Ground ginger 1 ts Cocoa 150 g Plain flour 1/2 ts Baking powder Desiccated coconut; - to finish Grease a 23 cm square tin, ideally with a removable base. To make the base, beat the butter and sugar until combined, then beat in the egg. Stir in the cashews, add the vanilla, flour, and baking powder and mix well. Spread this over the base on the tin. In the same bowl, make the ginger layer. Beat the butter and sugar until smooth, then beat in the tamarind and eggs. Stir in the glace ginger, ground ginger, and cocoa, then add the flour and baking powder.
