                        Mexican Wedding Cookies

     1/2  c             Butter
   2      tb            Confectioners sugar
   1      c             Flour
   1      c             Pecans -- chopped
   1      ts            Vanilla

Cream together the butter and sugar until light. Add flour, pecans,
and vanilla. Roll dough into 1" balls. Place on greased baking sheet
and flatten slightly. Bake at 300°F for 25 to 30 minutes to only a
light color. Roll in additional confectioners sugar while warm. Let
cool, roll again in confectioners sugar.
