MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Sand Dollar Cookies Categories: Cookies, Snacks, Nuts Yield: 18 Servings 1 1/2 c Butter; softened 2/3 c Confectioners' sugar 3 tb Sugar 4 ts Almond extract 2 2/3 c A-P flour 1/2 ts Salt 2 lg Eggs; lightly beaten Slivered almonds Cinnamon sugar In a large bowl, cream butter and sugars until light and fluffy, 5 to 7 minutes. Beat in extract. In another bowl, combine the flour and salt; gradually add to creamed mixture and mix well. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or until firm enough to roll. Set oven @ 325°F/165°C. Roll each portion of dough between waxed paper to 1/8" thickness. Cut with a 3-1/2" round cookie cutter dipped in flour. Using a floured spatula, place 1" apart on ungreased baking sheets. Brush with egg. Decorate with almonds to resemble sand dollars and sprinkle with cinnamon sugar. Bake 12 to 16 minutes or until edges begin to brown. Cool for 2 minutes before removing to wire racks.
