Set aside. Cream oil, sugars, egg and vanilla on medium speed of mixer for 2 minutes. Add 1/4 cup pumpkin and mix 1 minute more. Either with mixer or by hand add flour and remaining pumpkin alternately. Stir in nuts and raisins. Drop by teaspoon on lightly greased sheet. Bake at 350° F. for 15-20 minutes or until firm and lightly brown. Makes about 5-6 dozen cookies. Unbaked dough may be frozen in air-tight container.
