MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Old-Time Buttermilk Pie Categories: Pies, Pastry, Daity, Herbs Yield: 10 Servings MMMMM---------------------------CRUST-------------------------------- 1 1/2 c A-P flour 1 ts Salt 1/2 c Shortening 1/4 c Whole milk; cold 1 lg Egg; lightly beaten MMMMM--------------------------FILLING------------------------------- 1/2 c Butter; softened 2 c Sugar 3 tb A-P flour 3 lg Eggs 1 c Buttermilk 1 ts Vanilla extract 1 ts Ground cinnamon 1/4 c Lemon juice Whipped cream & fresh - berries (optional) Set oven @ 350°F/175°C. In a large bowl, mix flour and salt. Cut in shortening until crumbly. Gradually stir in milk and egg. On a lightly floured surface, roll dough to a 1/8"-thick circle; transfer to a 9" pie plate. Trim pastry to 1/2" beyond rim of plate; flute edge. For filling, in a large bowl, cream butter and sugar; beat in flour. Add eggs, 1 at a time, beating well after each addition. Stir in remaining ingredients and mix well. Pour into crust. Bake until center is set, 45 to 50 minutes. Cool completely on a wire rack. Serve or refrigerate within 2 hours.
