MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Zucchini Raisin Pie Categories: Alcohol, Desserts, Pies, Zucchini Yield: 1 Pie 1 Pkg unflavored gelatin 1/4 c Water 2 c Sugar 1/4 c Peach or apricot brandy 2 c Zucchini; sliced thinly 1/2 c Seedless raisins; chopped 2 Peaches; sliced, - fresh or canned 2 tb Brown sugar 1 Pie crust (9"); baked Dissolve gelatin in water. In a saucepan combine with sugar and brandy; heat until sugar dissolves. Add zucchini slices and simmer until squash becomes transparent. Add raisins and mix well. Pour into baked pie shell. Lyer with peach slices and drizzle with sugar. Place in a 350°F oven until brown sugar melts. Garnish with whipped cream, if desired. Recipe by Zucchini Cookbook by Nancy C.
