* Exported from MasterCook * Mincemeat-Pumpkin Pie Recipe By : Judy Ryder Serving Size : 6 Preparation Time :0:00 Categories : Pies Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 c Canned pumpkin 1/2 c Brown sugar -- firmly packed 3/4 ts Ground cinnamon 3/4 ts Ground nutmeg 1/2 ts Salt 3 lg Eggs 1/2 c Heavy cream 1 c Prepared mincemeat 1 Unbaked pie shell (9") Combine the pumpkin, brown sugar, cinnamon, nutmeg, and salt in a bowl, mixing well. Add the eggs and heavy cream. Beat until smooth using a rotary or electric mixer. Stir in the mincemeat and pour into the unbaked pie shell. Bake in a preheated 425°F oven for 35 minutes or until the filling is set. Cool slightly on a wire rack and serve warm. Note: I use evaporated skim milk instead of the cream.
