* Exported from MasterCook II * Apple Cranberry Muffins Recipe By : Western New York Apple Growers Association Serving Size : 12 Preparation Time :0:00 Categories : Muffins Holiday Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Muffins: 1 3/4 c All purpose flour 1/4 c Sugar 1 1/2 ts Baking powder 1/2 ts Baking soda 1/2 ts Salt 1 Egg 3/4 c Milk 3/4 c Sweetened applesauce 1/4 c Butter -- melted 1 c Fresh cranberries -- - coarsely chopped 2 ts All purpose flour Topping: 1/4 c Sugar 1/2 ts Ground cinnamon In medium bowl, combine 1-3/4 cups of flour, 1/4 cup sugar, baking powder, baking soda, and salt. In small bowl, combine egg, milk, applesauce, and butter, mix well. Add egg mixture to flour mixture, stirring just until moistened. Batter will be lumpy. In small bowl, toss cranberries with 2 tb flour, fold into batter. Spoon batter into twelve greased 2-1/2" muffin cups. In another small bowl, combine 1/4 cup sugar and cinnamon. Sprinkle over muffins. Bake in preheated 400°F oven 20 to 25 minutes or until wooden pick inserted in center comes out clean. Remove from pan; cool on wire rack.
