MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mini Corn Muffins w/Spicy Cheddar Filling Categories: Breads, Dairy, Cheese, Chilies, Snacks Yield: 48 servings 1 1/2 c A-P flour 1 c Cornmeal 2 ts Sugar 3/4 ts Baking powder 1/2 ts Salt 1 lg Egg; room temp 3/4 c Milk 1/4 c Oil 14 3/4 oz Can cream-style corn MMMMM--------------------------FILLING------------------------------- 2 c Shredded cheddar cheese 4 oz Can chopped green chilies 1/4 c Diced pimientos 1 ts Chilli spice mix 1/4 ts Hot pepper sauce Set oven @ 400°F/205°C. In a large bowl, whisk the first 5 ingredients. In another bowl, whisk egg, milk and oil until blended. Add to flour mixture; stir just until moistened. Fold in corn. Fill greased mini muffin cups three-fourths full. Bake 15-18 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks. Reduce oven setting to 350°F/175°C. Meanwhile, in a large bowl, combine filling ingredients. Using a small melon baller, scoop out the center of each muffin; spoon a rounded teaspoon of filling into the center. Bake 10-12 minutes or until cheese is melted.
