MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Oatmeal Chocolate Chip Muffins Categories: Breads, Chocolate, Grains, Nuts Yield: 12 servings 1 1/4 c Quick cooking oats 1 1/4 c Milk 1 c Pecans; chopped, divided 3/4 c Brown sugar; packed, - divided 3/4 c Semisweet chocolate chips 1/2 c Oil 1 lg Egg 1 1/4 c A-P flour 4 ts Baking powder 1 ts Salt Combine oats and milk in a medium bowl; allow to stand for 15 minutes. Set the oven A 400°F/205°C. Grease a 12-cup muffin tin or line cups with paper liners. Stir 1/2 of the chopped pecans, 1/2 cup of the brown sugar, chocolate chips, vegetable oil, and egg into oat and milk mixture. Combine flour, baking powder, and salt in a separate bowl. Stir in oat mixture until just moist. Spoon batter into the prepared muffin cups, filling each 2/3 full. Sprinkle tops with remaining brown sugar and pecans.
