MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Gluten-Free Sweet Potato Muffins Categories: Breads, Potatoes, Herbs Yield: 12 servings 2 1/4 c Gluten-free A-P baking flour; - without xanthan gum 1/4 c Sugar 1 ts Baking powder 1 ts Ground cinnamon 1/2 ts Baking soda 1/2 ts Salt 1/4 ts Ground allspice 1/4 ts Ground ginger 3 lg Eggs; room temperature 1 c Sweet potatoes; mashed 2/3 c Honey 2 tb Coconut oil; melted 1 tb Olive oil 1 ts Vanilla extract MMMMM--------------------------TOPPING------------------------------- 3 tb Sugar 1/4 ts Ground cinnamon Set oven @ 350°F/175°C. In a large bowl, whisk the first 8 ingredients. In another bowl, whisk eggs, sweet potatoes, honey, coconut oil, olive oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fill 12 greased or paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over batter. Bake until a toothpick inserted in center comes out clean, 25-30 minutes.
