* Exported from MasterCook * Zucchini Muffins Recipe By : Charlotte Ellis Serving Size : 24 Preparation Time :0:00 Categories : Muffins Freezer Meals Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 c Self rising flour * 1 ts Cinnamon 2 Eggs 1 1/4 c Sugar 3/4 c Oil -- +2 ts 2 1/2 c Zucchini -- grated 2 ts Vanilla 1 ts Nutmeg (optional) * If using all purpose flour, add 1 ts salt, 1 ts baking powder, & 1 ts baking soda. Mix flour with cinnamon and nutmeg. Mix in sugar. Add wet ingredients (eggs, oil, vanilla, zucchini) and mix until just combined. Spoon into prepared muffin pans.
