MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cream Cheese Cranberry Muffins Categories: Breads, Cheese, Fruits, Nuts Yield: 24 Muffins 1 c Butter; softened 8 oz Cream cheese; softened 1 1/2 c Sugar 4 lg Eggs; room temperature 1 1/2 ts Vanilla extract 2 c A-P flour 1 1/2 ts Baking powder 1/2 ts Salt 2 c Cranberries 1/2 c Pecans; chopped MMMMM--------------------------DRIZZLE------------------------------- 2 c Confectioners' sugar 3 tb Milk Preheat oven to 350°F/175°C. In a large bowl, cream butter, cream cheese and sugar until light and fluffy, 5 to 7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; stir into creamed mixture just until moistened. Fold in cranberries and pecans. Fill greased or paper-lined muffin cups 3/4ths full. Bake until a toothpick inserted in the muffins comes out clean, 20 to 25 minutes. Cool 5 minutes before removing from pans to wire racks. Combine confectioners' sugar and milk; drizzle over muffins.
