MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Blueberry Cream Muffins Categories: Breads, Fruits, Dairy Yield: 24 servings 4 lg Eggs; room temp 2 c Sugar 1 c Oil 1 ts Vanilla extract 4 c A-P flour 1 ts Salt 1 ts Baking soda 2 ts Baking powder 2 c Sour cream 2 c Fresh blueberries Set oven @ 400°F/205°C. In a bowl, beat eggs. Gradually add sugar. While beating, slowly pour in oil; add vanilla. Combine dry ingredients; add alternately with the sour cream to the egg mixture. Gently fold in blueberries. Fill greased muffin cups three-fourths full. Bake until a toothpick inserted in center comes out clean, 18-20 minutes. Cool 5 minutes before removing from pans to wire racks.
