MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Cranberry Muffins Categories: Breads, Fruits, Nuts Yield: 18 muffins 2 c A-P flour 1 c Sugar 1 1/2 ts Baking powder 1 ts Ground nutmeg 1 ts Ground cinnamon 1/2 ts Baking soda 1/2 ts Ground ginger 1/2 ts Salt 2 ts Grated orange zest 1/2 c Shortening 3/4 c Orange juice 2 lg Eggs; room temp, lightly - beaten 1 tb Vanilla extract 1 1/2 c Coarse chopped cranberries 1 1/2 c Chopped pecans In a large bowl, combine the flour, sugar, baking powder, nutmeg, cinnamon, baking soda, ginger, salt and orange zest. Cut in shortening until crumbly. In a small bowl, combine the orange juice, eggs and vanilla. Stir into dry ingredients just until moistened. Fold in cranberries and nuts. Fill 18 greased or paper-lined muffin cups two-thirds full. Bake @ 375°F/190°C until a toothpick inserted in the middle comes out clean, 18-20 minutes.
