* Exported from MasterCook * Peanut Muffins Recipe By : Taste of Home Magazine, Jun/Jul 1995 Serving Size : 12 Preparation Time :0:15 Categories : Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c All-purpose flour 1/4 c Sugar 1 tb Baking powder 1/4 ts Salt 2 Eggs -- slightly beaten 1/2 c Butter -- melted 1/2 c Milk 3/4 c Unsalted dry roasted peanuts In a large bowl, combine flour, sugar, baking powder, and salt. Combine eggs, butter, and milk; add to the dry ingredients and stir just until moistened. Fold in peanuts. Fill greased or paper-lined muffin cups 2/3rds full.
