* Exported from MasterCook * Raspberry Streusel Muffins Recipe By : Southern Living Annual Recipes Cookbook Serving Size : 12 Preparation Time :0:00 Categories : Muffins Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 3/4 c Flour -- divided 2 ts Baking powder 1/2 c Sugar 1 lg Egg -- lightly beaten 1/2 c Milk 1/2 c Butter -- melted 1 c Frozen unsweetened raspberries 1/4 c Pecans -- chopped 1/4 c Brown sugar -- firmly packed Combine 1-1/2 cups flour, baking powder, and sugar in a large bowl; make a well in center of mixture. Combine egg, milk, and 1/2 cup butter; add to dry ingredients, stirring just until moistened. Fold in raspberries. Spoon into greased muffin pans, filling 2/3rds full. Combine remaining 1/4 cup flour, 2 tb butter, pecans, and brown sugar; sprinkle over muffins. Bake at 375°F for 20 to 25 minutes. Remove from pans immediately. - - - - - - - - - - - - - - - - - -
