MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Overnight Rolls Categories: Breads Yield: 20 Servings 1/4 oz Env active dry yeast 1/2 c Sugar; +3/4 ts, divided 1 1/3 c Water; +3 tb, warm - (115°F/46°C); divided 1/3 c Oil 1 lg Egg; room temperature 1 ts Salt 5 c A-P flour Butter; melted (optional) In a bowl, dissolve yeast and 3/4 ts sugar in 3 tb warm water. Add remaining 1/2 cup sugar, remaining 1-1/3 cups warm water, oil, egg, salt, and 2 cups flour; mix well. Add enough remaining flour to form a soft dough. Turn dough onto a floured surface; knead until smooth and elastic, 6 to 8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down. Shape into 20 balls. Roll each ball into an 8" rope; tie into a loose knot. Place on a greased baking sheet; cover and refrigerate overnight. Allow rolls to sit at room temperature for 45 minutes before baking. Bake @ 375°F/190°C until lightly browned, 12 to 15 minutes. Brush with butter if desired. Remove to wire racks to cool.
