In large heavy saucepan, combine sugar, corn syrup, and water. Cook until sugar dissolves, stirring constantly. Continue cooking until candy thermometer reaches hard crack stage (300°F), stirring occasionally. Remove from heat; stir in vanilla and baking soda.
