MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Chimichangas Categories: Vegetables, Chilies, Potatoes, Herbs, Breads Yield: 12 Servings 1/4 c Bacon grease or olive oil 2 c Beef, pork, or chicken; - cooked, shredded 1 md Onion; diced 2 cl Garlic; minced 2 md Tomatoes; chopped 8 oz Chopped green chilies - (2 cans) 1 lg Potato; boiled, peeled, - diced 1 ts Salt 1 1/2 ts Dried oregano 1 ts Chilli spice mix 2 tb Fresh cilantro; minced 12 Flour tortillas (12"); - warmed Oil; for frying MMMMM---------------------OPTIONAL TOPPINGS-------------------------- Cheddar cheese; shredded Sour cream Guacamole Salsa Lettuce; shredded Tomatoes; chopped Lime wedges In a large skillet, heat bacon grease over medium heat. Add beef, onion, garlic, tomato, chilies, and potato. Stir in salt, oregano, chilli spice, and cilantro. Simmer until liquid has reduced, 2 to 3 minutes. To assemble, place 1/2 cup off-center on each tortilla. Fold up edge nearest filling; fold in both sides and roll up. If needed, secure with a toothpick. In an electric skillet or deep-fat fryer, heat oil to 375°F. Cook chimichangas until golden brown, turning to cook all sides. Drain on paper towels. Serve with toppings of your choice.
