* Exported from MasterCook * Dinner Dilema Huevos Rancheros Recipe By : Woman's Day Magazine, Sep 1998 Serving Size : 4 Preparation Time :0:00 Categories : Mexican Quick n' Easy Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Avocado -- diced 1 c Salsa 4 Flour tortillas Non stick spray 3 c Frozen pepper and onion mixture 10 lg Eggs Salt and pepper -- to taste Topping: Sour cream Cheese -- shredded Mix avocado and salsa in a small bowl; set aside at room temperature. Heat oven to 350°F. Line 2 cookie sheets with foil. Lightly coat both sides of tortillas with nn-stick spray. Bake on prepared sheets 8 to 10 minutes or until crisp. Remove to dinner plates. Meanwhile heat a large non-stick skillet over medium heat; add frozen pepper mixture and cook, stirring occasionally, 2 minutes or until thawed and soft. Drain. Wipe skillet with paper towel. Lightly coat with nonstick cooking spray and place over medium heat. Add beaten eggs and scramble until cooked through but not dry.
