MMMMM----- Recipe via Meal-Master (tm) v8.01 Title: Chile Con Queso Mini-Bites Categories: Mexican, Appetizers Yield: 30 Servings 1/2 c Tomato; chopped 1/4 c Green onions; minced 1 cl Garlic; minced 4 Eggs; beaten 1/2 c Cheddar (2 oz); shredded 1/2 c Pepper jack cheese (2 oz) 1 ts Chili powder 1/2 ts Cumin 1/8 ts Red pepper 4 oz Can chopped green chiles; rinsed & drained Whole green chiles; sliced Coat a nonstick skillet with cooking spray; place over medium-high heat until hot. Add tomato, green onions & garlic. Saute until onions are tender. Combine tomato mixture, eggs, cheeses, chili powder, cumin, red pepper & chopped green chiles. Stir well. Spoon 1 tb mixture into miniature muffin pans coated with cooking spray. Bake at 425°F for 8 to 10 minutes or until centers are set. Remove from oven; let cool in pans 1 minute.
