MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Darius' Spinach & Chicken Empanadas Categories: Poultry, Greens, Cheese, Herbs, Pastry Yield: 10 Servings 1 c Rotisserie chicken; chopped 1 c Frozen spinach; drained 1 c Cheese; for melting 1 ts Salt 1/2 ts Ground pepper 1/2 ts Garlic powder 1/2 ts Cajun seasoning 10 Empanada dough discs 1 lg Egg 1 tb Water Set the oven @ 375°F/190°C. In a bowl, mix together the chicken, spinach, cheese, salt, ground pepper, garlic powder, and cajun seasoning. Mix well to combine. Put a heaping ts of filling on one side of the dough, fold the other half of the dough over, and crimp with a fork. In a small bowl, mix the egg and water together.
