MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Baked Chicken Burritos Categories: Poultry, Vegetables, Breads, Cheese, Chilies Yield: 12 Servings 6 tb Butter 1 lg Onion; chopped 1/4 c Bell pepper; chopped 1/2 c A-P flour 3 c Chicken broth 10 oz Can diced tomatoes with green - chiles; undrained (Ro*Tel) 1 ts Ground cumin 1 ts Chilli spice mix 1/2 ts Garlic powder 1/2 ts Salt 2 tb Jalapeno peppers; chopped 15 oz Can chilli with beans 8 oz Cream cheese; in cubes 8 c Chicken; cooked, diced 24 Flour tortillas (6"); - warmed 6 c Colby-Monterey Jack cheese; - shredded Salsa (optional) Set oven @ 350°F/175°C. In a Dutch oven, heat butter over medium-high heat. Add onion and pepper; cook and stir until tender. Stir in flour until blended; gradually stir in broth. Bring to a boil; cook and stir 2 minutes. Reduce heat; stir in tomatoes, seasonings, and jalapeno. Cook 5 minutes. Add chilli and cream cheese; stir until cream cheese is melted. Stir in chicken. Spoon about 1/2 cup filling across center of each tortilla; sprinkle each with 1/4 cup Colby-Monterey Jack cheese. Fold bottom and sides over filling and roll up. Place in 2 greased 13x9" baking dishes. Bake, covered, 35 to 40 minutes or until heated through. If desired, serve with salsa.
