MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Mexican Turkey Skillet Categories: Poltry, Squash, Rice, Beans, Herbs Yield: 8 Servings 1 lb Lean ground turkey 1 c Zucchini; chopped 1/2 c Red bell pepper; chopped 2 ts Oil 2 c Cooked rice 15 oz Can black beans; rinsed, - drained 14 1/2 oz Can Mexican stewed tomatoes 8 oz Can tomato sauce 1/2 ts Ground cumin 1/4 ts Salt 1/4 ts Pepper 1 c Shredded Mexican cheese - blend Avocado; chopped (optional) Set oven @ 350°F/175°C. In a large cast-iron or other ovenproof skillet, cook turkey over medium heat until no longer pink; drain. Set turkey aside. In the same skillet, saute the zucchini and red pepper in oil until crisp-tender, about 2 minutes. Stir in the turkey, rice, beans, tomatoes, tomato sauce, cumin, salt, and pepper. Cover and bake for 30 minutes. Sprinkle with cheese. Let stand for 5 minutes before serving. If desired, top with avocado.
