MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Yuca Frita Con Mojo Categories: Vegetables, Herbs, Citrus Yield: 6 Servings MMMMM----------------------------MOJO--------------------------------- 1/4 c Sour orange marinade 1/4 c Olive oil 4 cl Garlic; minced 1/2 ts Ground cumin 1/4 ts Salt 1/4 ts Dried oregano 1/4 ts Pepper MMMMM---------------------------FRIES-------------------------------- 1 1/2 lb Yuca or cassava root; peeled - cored, in 3" pieces 1 ts Salt Oil; for frying In a small bowl, whisk the mojo ingredients. Refrigerate, covered, at least 2 hours or overnight. Place yuca and 1 ts salt in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until fork-tender, 20 to 25 minutes. Drain and pat yuca pieces dry. In a deep skillet, heat 1" oil to 375°F/190°C. Fry yuca, a few pieces at a time, until golden brown, 8 to 10 minutes. Drain on paper towels.
