MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Fish Tacos Categories: Seafood, Breads, Chilies, Salads, Sauces Yield: 8 Servings MMMMM---------------------------BATTER-------------------------------- 1 c A-P flour 2 tb Corn starch 1 ts Baking powder 1/2 ts Salt 1 lg Egg 1 c Beer -OR- 1 c Club soda MMMMM---------------------------SAUCE-------------------------------- 1/2 c Plain yoghurt 1/2 c Mayonnaise 1 Lime; juiced 1 Jalapeno; seeded, minced MMMMM-----------------------PICO DE GALLO---------------------------- 1 ts Capers; minced 1/2 ts Dried oregano 1/2 ts Ground cumin 1/2 ts Dried dill weed 1 ts Ground cayenne MMMMM---------------------------TACOS-------------------------------- 1 qt Oil; for frying 1 lb Cod or other firm, white - fish filets (3 oz ea) 12 oz Pkg corn tortillas 1/2 md Cabbage; shredded fine To Make Batter: In a large bowl, combine flour, corn starch, baking powder, and salt. Blend egg and liquid, then quickly stir into the flour mixture (don't worry about a few lumps). To Make White Sauce: In a medium bowl, mix together yoghurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne. Heat oil in deep fryer to 375°F/190°C. Dust fish pieces lightly with flour. Dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. Lightly fry tortillas; not too crisp.
