MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Carrot Dessert Categories: Desserts, Indian Yield: 4 Servings 2 c Carrot; grated 1/2 c Sago; washed -OR- 1/2 c Tapioca pearls 1 qt Fresh cow's milk 1 c Jaggery 2 tb Raisins 2 tb Almonds or cashews; chopped 1 ts Vanilla extract 2 tb Ghee Soak sago pearls in 2 cups of water for 30 minutes. Heat the ghee in a heavy-bottomed pan. Lightly sauté the raisins and cashews and set aside. If almonds are used, they should be blanched, peeled, and chopped instead of sautéed. In remaining ghee, lightly sauté the grated carrots for about 3 minutes. Add milk and sago pearls. Bring to a boil and continue stirring occasionally, and add the nuts and raisins. Remove from heat. Add jaggery and stir well. Mix in vanilla extract. This sweet can be served either hot or cold. It will keep for a couple of days in the refrigerator.
