MMMMM----- Recipe via Meal-Master (tm) v8.06 Title: Lentil Beet Soup Categories: Indian, Soups Yield: 1 Batch 1/2 c Lentils 1 Beet; chopped 4 c Water or stock 1 tb Fresh mint 1 ts Fresh ginger; grated 1 tb Lemon juice -OR- 1/4 c Yogurt 2 tb Ghee 2 tb Onion; chopped Salt and pepper; to taste Put the beet, lentils, and ginger with water in a pressure cooker. Cook for 5 minutes after bringing to maximum pressure. Cool and blend. In a separate pan, sauté onions in ghee; add the blended soup, salt, pepper, and yogurt or lemon. Mix thoroughly and serve hot.
